Try this - I like it with a nice drop of runny custard ……
4 oz margarine
4 oz sugar
1 dsp black treacle or golden syrup
1 egg
¼ tsp salt
¼ tsp mixed spice
6 oz mixed fruit
3 tbs cold tea
8 oz self raising flour
Cream fat and sugar, mix in treacle/syrup, beaten egg, salt, spice and fruit. Stir in the cold tea and then mix in the flour.
Transfer to greased oven proof dish.
Bake with lid on, 325/350 deg - gas mark 3-4 for about one hour. Test by inserting a skewer or knife.
Any left over may be reheated for later use. It is improved by adding a little water and heating with the lid on.
Have you ever tasted Mrs Watts’ cold cake??!
Mrs Watts lived in Purlpit until her death at the age of 90.
For many years she was the Chapel Treasurer. From time to time she would bake a cake which we call “cold cake” because it goes into a cold oven, not pre-heated. Have a go at the following:-
4 oz margarine
5 oz sugar
4 oz S.R. flour
2 eggs
2 tablespoons milk
Mix all together and put in greased loaf tin, put in cold oven, bake for one hour at 350F, gas mark 4.
