It was in 1848 when Joseph Wissner built himself a brewhouse in Fulda and soon the establishment got a good reputation. In 1866 William Giesel bought the brewery and it was through his son-in-law that the brewery really established itself. Although Hochstift is still a family owned concern it has acquired 4 other breweries which operates under it; Hochstiftliches Brauhaus Bayern, Motten (formerly. Will-Bräu), Lauterbacher Burgbrauerei, Auerhahn-Bräu in Schlitz and Brauerei Salch in Hammelburg.
