GARLIC & GINGER SALMON

Ingredients
- 2 salmon fillets.
- 1 fresh chilli, split, seeded and finely chopped.
- 4 tablespoons of soy sauce.
- The juice of half a lime.
- 1 teaspoon of thyme.
- 2 cloves of garlic, crushed.
- 1 teaspoon of ground ginger.
Instructions
- Mix the soy sauce, chilli, lime juice and spices to form a marinade.
- Coat the salmon generously with the marinade then leave it to marinate in the remainder, with the skin side up in a covered bowl, overnight.
- Wrap the salmon in foil and bake for 25 minutes in a pre-heated oven at 220C (425F).
- Serve with steamed rice and your choice of vegetables.
