LEMON & GARLIC CHICKEN

Ingredients
- 2 Chicken breast fillets, skinned.
- 2 tablespoons of olive oil
- 1 teaspoon of dried thyme, or a small handful of shredded fresh thyme.
- 2 tablespoons lemon juice
- 2 cloves of garlic, crushed.
- A dash of white wine.
Instructions
- Combine all ingredients (except the chicken) to make a marinade.
- Marinate the chicken breasts in this mixture for 2 or more hours.
- Grill at a medium heat, or cover and cook in the oven for 30 minutes at 200C (390F).
- Serve with your choice of vegetables - this goes particularly well with new potatoes or steamed rice. If you have some leftover fresh thyme, you can sprinkle it over the chicken. It will look rather nice.
