  1. Pre-heat your oven to 220C (425F).
  2. Using a small whisk, blend 4 tablespoons of cold water, the tomato puree, lemon juice and all the spices to make a smooth paste.
  3. Place the chicken breasts, green pepper and fresh chillies on a large piece of foil and coat them evenly with the paste.
  4. Fold the edges of the foil over to form a parcel.
  5. Bake on the top shelf of the oven for 35-40 minutes.
  6. Serve on a warmed plate with rice, scattering the fresh coriander over for decoration.
