CHICKEN MASALA

Ingredients
- 2 Chicken breast fillets, with the skin removed.
- 1 green pepper, seeded and chopped.
- 1-2 fresh chillies, split, seeded and thinly sliced.
- 4 tablespoons of tomato puree.
- The juice of half a lemon.
- 1/2 teaspoon of chilli powder.
- 2 teaspoons of ground cumin.
- 2 teaspoons of ground coriander.
- 3 teaspoons of vegetable oil.
- Fresh coriander (for decoration).
Instructions
- Pre-heat your oven to 220C (425F).
- Using a small whisk, blend 4 tablespoons of cold water, the tomato puree, lemon juice and all the spices to make a smooth paste.
- Place the chicken breasts, green pepper and fresh chillies on a large piece of foil and coat them evenly with the paste.
- Fold the edges of the foil over to form a parcel.
- Bake on the top shelf of the oven for 35-40 minutes.
- Serve on a warmed plate with rice, scattering the fresh coriander over for decoration.
