MEXICAN CHILLI CHICKEN

Ingredients
- 2 Chicken breast fillets, skinned and chopped.
- 1 green pepper, seeded and chopped.
- 1 onion, chopped.
For the sauce:
- 3 tomatoes, finely chopped.
- 2 fresh chillies, split, seeded and thinly sliced.
- The juice of half a lime.
- 1/2 teaspoon of ground cumin.
- 1/2 teaspoons of oregano.
- 1/2 teaspoon black pepper.
- 1 clove of garlic, crushed.
- Tabasco.
Instructions
- Place the chicken, green pepper and onion in the bottom of a roasting tin.
- Combine the sauce ingredients in a bowl and mix well.
- Coat the chicken, peppers and onion with the sauce.
- Cover and cook in a pre-heated oven for 30 minutes at 200C (390F).
- Serve on a warmed plate with steamed rice or in a tortilla or taco.
