THAI GINGER CHICKEN

Ingredients
- 2 Chicken breast fillets, skinned and chopped.
- 1 red pepper, seeded and chopped.
- 6 spring onions, chopped into large chunks.
For the dressing:
- The juice of one lime.
- 3 tablespoons of Nam Pla (fish sauce).
- 2 teaspoons of finely-chopped lemon grass.
- 2 tablespoons of chopped fresh coriander leaves.
- 2 teaspoons of ginger.
- 2-4 chopped red bird chillies.
Instructions
- Combine the dressing ingredients in a bowl and mix them well.
- Marinate the chopped chicken breasts in this mixture for 2 or more hours.
- wrap in a foil parcel and cook in the pre-heated oven at 200C (390F).
- After 15 minutes, removed the parcel from the oven. Add the spring onions and red pepper, re-wrap the parcel and return it to the oven for 15 more minutes.
- Serve with steamed rice or noodles and decorate with fresh coriander leaves. Be sure to pour the juices that will have collected in the foil parcel into your rice or noodles.
