Lorna's Red
Dragon Pie |

Ingredients:
Base:
Assorted red
vegetables,
e.g. kidney
beans, beetroot, carrot, red cabbage & red pepper
Garlic
Cinnamon stick
Cloves
Chopped root
ginger
Salt & Pepper to
season
Vegetable stock
cube
enough water to
prevent sticking
Top:
Potatoes to mash
(Maris Piper?)
Knob of butter
Grated cheese
for topping (enough
to taste)

Method:
According to the
author, this is a "bung-it-in" recipe.
-
Cook the veggies in a
saucepan first, remove clove and cinnamon once tender.
-
Boil the tatties and
mash in another saucepan.
-
Put veg. mix into a
large casserole dish
-
Spread mashed tatties
over top veggies
-
Sprinkle grated cheese
over top tatties
-
Put in a hot oven
(temperature will be up to the individual to decide) and heat through
until tatties and cheese are browned. (Dinna let it burn!)
- You can make
this green or golden dragon pie by changing the colour of the veggies
used. (Definitely the surprise hit of the weekend!!)

FJ's Veggie Soup |

Ingredients:
Onion (1 or 2
depending on taste)
Carrots (2)
Chopped Tomatoes
400g
(large tin)
Vegetable stock
cube
Any other
veggies of choice, e.g. leek, turnip, courgette, pepper, mushroom
|
Method:
-
Chop onion and
carrots
-
Make up 3/4 of stock
with boiling water
-
Put onion, carrots
and tomatoes, and any other veg in large saucepan
-
Stir in the stock
-
Bring to boil
-
Simmer for 20min
-
For a thick broth,
remove half contents and blend in a blender. Return to soup, and
stir
- This is a totally healthy soup based
on a diet recipe - we had soup twice on the weekend, with lentils or
barley, but without the pulses, you can eat as much as you like!

Stanley's Dumpling Recipe - |

Ingredients:
4 eggs
(beaten)
2lbs
Self-Raising Flour 1lb Sugar
1/2lb Raisins
1/2lb Currants
1/2 shredded
suet
Pinch of Salt
Mixed Peel
Cherries
1 tablespoon
of treacle
Cinnamon &
Nutmeg
Rum or Brandy
Muslin cloth, pillow slip, large
mixing bowl, large saucepan to simmer dumpling in, and Pyrex (or
similar) plate to fit inside saucepan |
Method:
-
Mix
flour & suet in a large mixing bowl, add sugar, fruit and all dry
ingredients.
-
Mix in
rum/brandy & beaten eggs
-
Mix to
firm dough.
-
Place
in muslin cloth and baste with dry flour. Place in muslin or pillow
slip.
-
Bring
salted water to boil before placing dumpling on plate in the pot.
-
Cook
for FOUR hours replacing water if necessary
- N.B. if any ingredient is
missing the dumpling won't be right as each and every
ingredient is essential, such is storytelling...
