Wilts County record office hold most of the other jurisdictions of wills prior to 1858. They are indexing them in the wills project but it is likely to take several years.
Wills from 1858 are held at the Principal probate registry and indexed annually - that is, you have to know the name of the person and the year they died to find them.
Usually, only the better off made wills. There are very few made by working men. Women are also underrepresented due to the property laws of the age.
