Rabarbarsaft

A Swedish recipe for all that Rhubarb you don’t know what to do with.  It makes a refreshing drink.

Place 3 litres of chopped rhubarb in a bucket.

Sprinkle 35 grams of Tartaric Acid over & add 2 litres of cold water and cover. Let it soak for 24 hours.

Strain off the juice and blend the juice with 1kg of sugar.
Pour into bottles.  To make a drink dilute with 4 parts of water.  The syrup will keep for about a week.
